The top of a shell and an open Beausoleil Oyster

Beausoleil Oysters originate from the New Brunswick oyster appellations in Negauc, Canada, along the Atlantic coast. Known as “Beautiful Sun” in translation, these oysters are tray-suspended farmed in Miramichi Bay. The continuous interaction with waves and tides ensures their shells are consistently shaped and hardened. Typically reaching up to 2.5 inches in size.
