Rustichella d’Abruzzo Egg Tagliatelle
From the Italian word tagliare, meaning “to cut,” as tagliatelle were traditionally hand-made and cut with a knife. Wider than fettuccine, this pasta is mostly associated with Bologna, but today is very common throughout Italy.
